Proyecto Ojo de Agua is a collective initiative made up of eight producers, each managing their own plot of land — often no more than a few hectares. In 2024, for the first time, these growers began delivering carefully harvested, fully ripe red Bourbon cherries to Beneficio La Esperanza, the wet mill operated by Los Volcanes Coffee.
This collaboration has introduced a new level of traceability, process consistency, and post-harvest control, allowing each producer’s work to shine through in the cup — and connecting their coffee to specialty buyers seeking both transparency and excellence.
Many of the producers involved in Ojo de Agua come from families that have grown coffee for generations — working the land with intimate knowledge of its seasons and potential. The name "Ojo de Agua", meaning spring of water, reflects both the natural abundance of the region and the quiet resilience of those who live and farm here.
It also speaks to the purpose of this project: to be a source of renewal — economically, socially, and environmentally — for the producers and their communities.
